Instructions
- Prepare the Meatballs: In a large bowl, combine ground meat with breadcrumbs or oats, minced garlic, grated ginger, finely chopped onion, egg, and a pinch of salt and pepper. Mix gently until just combined to avoid making the meatballs tough.
- Shape and Sear: Form the meat mixture into evenly sized meatballs. Heat oil in a skillet over medium heat and brown the meatballs on all sides until golden but not fully cooked through.
- Make the Curry Sauce: In the same skillet, sauté remaining garlic, ginger, and onions until fragrant and softened. Add curry powder and stir for about a minute to release its aromas. Pour in the coconut milk and bring the mixture to a gentle simmer.
- Simmer the Meatballs in Sauce: Return the seared meatballs to the skillet. Cover and let them simmer gently in the coconut curry sauce for 15–20 minutes, until meatballs are cooked through and tender.
- Finish and Serve: Adjust seasoning with salt and pepper to taste. Sprinkle with fresh cilantro or parsley. Serve hot over rice, noodles, or your preferred side for a comforting and flavorful meal.
Notes
- Use fresh curry powder or grind your own for the most vibrant flavor.
- Handle the meat mixture lightly to keep meatballs tender and avoid tough textures.
- Make meatballs uniform in size for even cooking.
- Simmer the sauce gently to prevent breaking the coconut milk.
- Optionally, toast curry powder in oil before adding liquid to deepen smoky notes.
- For a spicy kick, add fresh chili or cayenne pepper to the sauce.
- For vegetarian variations, substitute meatballs with lentil or chickpea balls.
- To keep gluten-free, replace breadcrumbs with almond flour or gluten-free alternatives.
- For extra creaminess, stir in Greek yogurt or cream cheese at the end.
- Add fresh herbs like basil, mint, or Thai basil to customize flavor.
