Breading

- 1 1/2 cups Panko breadcrumbs

- 1 tablespoon mustard (optional, for spreading inside or serving)
Instructions
- Prepare the chicken breasts: Pound the chicken breasts to an even thickness using a meat mallet or rolling pin to ensure quick and even cooking and make rolling easier.
- Layer the fillings: On each flattened chicken breast, lay one or two slices of ham followed by a generous layer of Swiss cheese. Roll the chicken tightly to enclose the filling and secure with toothpicks if needed.
- Coat the chicken rolls: Prepare three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with Panko breadcrumbs. Coat each chicken roll first in flour, then egg, then breadcrumbs, pressing gently to adhere.
- Fry until golden: Heat butter or oil in a large skillet over medium heat. Fry the chicken rolls, turning often, until every side is golden brown and crisp, about 3-4 minutes per side.
- Bake to finish cooking: Transfer the fried chicken rolls to a preheated oven at 375°F (190°C) and bake for 15 minutes until the chicken is fully cooked and the cheese is melty inside.
Notes
- Pound chicken breasts evenly to prevent tearing and ensure uniform cooking.
- Chill rolled chicken in the fridge for 15 minutes before breading for firmer shape.
- Use Panko breadcrumbs for the crispiest and most golden crust.
- Do not overcrowd the pan when frying; fry in batches to maintain oil temperature and crispness.
- Remove toothpicks after frying to avoid biting into them while eating.
