Instructions
- Caramelize the Onions: Slice the yellow onions thinly. Heat butter and olive oil in a large pot over medium heat. - Add Broth and Simmer: Add the beef or vegetable broth along with fresh thyme sprigs and bay leaves. Bring to a gentle simmer and cook for 30 minutes to meld the flavors into a fragrant, savory broth.
- Prepare the Baguette and Cheese: While the soup simmers, slice the baguette into thin rounds and toast until crisp and golden. Grate the Gruyere cheese in preparation for topping.
- Assemble and Broil: Ladle the hot soup into oven-safe bowls. Place toasted baguette slices on top of the soup, then generously sprinkle with grated Gruyere. Place the bowls under a broiler for a few minutes until the cheese melts, bubbles, and turns golden brown, forming a delicious crust.
