Ingredients
Scale
Main Ingredients
- 1.5 lbs baby potatoes, rinsed and dried (halved or quartered if large)
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1/2 cup grated Parmesan cheese, freshly grated recommended
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
Optional Spices
- 1/2 tsp paprika (optional)
- 1/4 tsp red chili flakes (optional)
Instructions
- Prepare the Potatoes: Rinse the baby potatoes thoroughly and pat them dry. If any potatoes are larger, cut them into halves or quarters to ensure even cooking and maximize the surface area for crisping.
- Make the Garlic Butter Sauce: Melt the unsalted butter in a small saucepan over medium heat. Add the minced garlic and sauté gently for 1-2 minutes, until fragrant but not browned, infusing the butter with warm garlic aroma.
- Combine Potatoes and Sauce: In a large mixing bowl, toss the potatoes with olive oil, the garlic butter mixture, salt, pepper, and any optional spices (paprika or chili flakes). Coat all potato pieces evenly for full flavor.
- Roast Until Golden and Crispy: Spread the coated potatoes evenly on a baking sheet lined with parchment paper. Roast in a preheated oven at 425°F (220°C) for 25-30 minutes, turning once halfway through to ensure all sides become crispy and golden brown.
- Add Parmesan and Fresh Herbs: Remove potatoes from the oven when hot. While still warm, sprinkle evenly with grated Parmesan cheese and garnish with freshly chopped parsley to add freshness and color.
Notes
- Pat potatoes dry before roasting to help achieve a crispier texture.
- Roast at high heat (425°F) for the best crunchy exterior without overcooking the potatoes.
- Do not overcrowd the baking sheet; allow enough space so potatoes roast evenly without steaming.
- Use freshly grated Parmesan cheese for better melting and more vibrant flavor compared to pre-grated versions.
- Turn potatoes once midway through the roasting time to develop even golden browning.
- For reheating leftovers, warm in an oven at 400°F for 10-15 minutes instead of microwaving to preserve their crispiness.
